Curcumin is a yellow pigment obtained from the rhizomes of turmeric. Its principal component is curcumins. It is soluble in ethanol but insoluble in water. It exhibits a yellow shade at acidic and neutral pH and a reddish-brown at alkaline pH. Stable to heat but sensitive to light.
